Remilled durum wheat semolina for pizza, fresh pasta and bread

Remilled durum wheat semolina is produced from selected durum wheats and is suitable for processing pizza, focaccia, fresh pasta and bread. The high protein quality and uniform grain size allow for maximum development of the organoleptic characteristics of the finished product.

Semolina rimacinata is distinguished from traditional semolina by its finer grain size, which makes it easier to work with and more similar to wheat flour. Added as a percentage to pizza doughs it imparts crispness, golden color and a more intense flavor typical of Apulian and southern traditions. Also excellent as a dusting when rolling out pizza, it prevents the dough from sticking to the work surface without altering the final flavor.
